There are Wagyu beef lines produced throughout Japan that command prices in excess of $200 per pound. But they, like a rare bottle of Lafitte Rothschild, represent the very top of the scale. Even in Japan, the high-end grades of Wagyu beef are extremely limited and very expensive. Hormone-Free Feeding Program Results in Better Beef

KBA™ realizes the economic importance of hormones to the cattle feeding industry, but they promote a higher lean to fat ratio, thereby hindering both flavor and tenderness. That's why Kobe Beef America™, Inc. has chosen not to use them. You can rest assure that our cattle will never get added hormones or added antibiotics and will be produced the all natural way on only vegetation diets with no animal bi-products.

Currently less than two percent of the beef produced in America qualifies for a “USDA Prime” status – the highest USDA rating available. The reason cattle across America are grading poorly is the financial inability for the ranchers across America to feed their cattle the required days for the cattle to have the chance to grade USDA Prime. Most producers today are feeding their cattle in a feedlot system for somewhere around 120 days. With grain prices and cattle cost at an all time high, these producers are just trying to move beef through the system in as little amount of time to keep costs down and not worrying about quality. On the contrary, Kobe Beef America will never process one of our beef animals before it’s time. We are feeding our cattle 2 to 3 times longer than commercial cattle and are grading upwards of 90% USDA Prime. Beef quality will always be our focus! Prime cuts are supposed to be the best US steaks available. However, the US rating system is not equipped to grade American Wagyu.

Japan has tracked genetic lines of Wagyu cattle for more than 30 years and have developed a grading system that's much more precise where eating quality is concerned; that system includes evaluation for meat color, fat color, marbling scores from 1-12, and meat texture. In the United States, all fed beef is graded by the USDA into 3 categories... Select, Choice, and Prime.

KBA™ uses the USDA scale AND the Japanese scale to ensure the most consistent quality. Most USDA Prime grades at a 5 to 6 on the Japanese marbling scale. Our beef is graded into two classifications: 5 and 6. For our lower grade we use 7; an exclusive amount rates a Japanese BMS score of 8, 9, 10 with some occasional 11”s, & 12’s. Only these higher grades are cut for our website customers to insure that our product will literally have "melt in your mouth tenderness" with unmatched flavor.
