(Las Vegas, NV ) – Yellowtail Japanese Restaurant & Lounge, one of five acclaimed dining destinations owned and operated by The Light Group, was awarded Las Vegas Weekly’s Readers’ Choice Award for Best New Restaurant. The prestigious honor is one of many accolades received by Executive Chef Akira Back, who has envisioned and executed every delectable menu item since the restaurant’s July 2008 opening. Back, a Chef Morimoto protégé and Iron Chef alum, has a meticulous approach to his preparation, evident in dishes like the Maine Lobster Carpaccio with sweet onion and cilantro; and the Strawberry Roll with spicy tuna and cucumber.
