Ingredients
2 Each Wagyu Beef Rib Racks
As Needed Kosher Salt
As Needed Black Pepper (coarse ground)
1 Cup Vegetable Oil
2 Cups Barbecue Sauce (see recipe)
2 Each Oranges (cut into quarters)
4 Each Chipotle Chiles
4 Each Jalapeños (chopped)
1 Cup Tomato Paste
2 Cups Onions (chopped)
2 Tablespoons Garlic (minced)
1 Cup Honey
½ Cup Worcestershire Sauce
1 Cup Cider Vinegar
24 oz Beef Stock
½ Cup Liquid Smoke
8-10 Each Bay Leaves
Method
- Coat meat heavily with salt and pepper. Rub into the meat.
- Place meat into a hot roasting pan containing the oil. Sear the ribs well on both sides. (Or you may place the ribs onto a hot barbecue grill then place into a roasting pan).
- Meanwhile, place remaining ingredients into a sauce pot. Bring to a boil then simmer for 10 minutes. Pour over the ribs. Cover the pan tightly.
- Place into a preheated 200 degree oven for 8 hours or until the meat is tender.
- Strain the pan drippings and serve as extra sauce.
