Chipotle-Pineapple Chutney

Ingredients
Yields 3-4 Cups
1 Each Ripe Pineapple (peeled)
½ Cup Butter (melted)
¼ Cup Brown Sugar
½ Cup Chipotle Chilies en Adobo (deseeded and minced with adobo sauce)
½ Cup Cider Vinegar
½ teaspoon Salt
Method
- Remove pineapple core then slice to ¼” thickness.
- Into a bowl, combine the remaining ingredients and mix well.
- Dip the pineapple slices into the mixture to coat well on all sides then place onto a greased baking sheet pan.
- Place into a pre heated 400 degree oven for 25 minutes or until well caramelized. Let cool to room temperature and reserve the cooking liquid.
- Dice the pineapple and place into a bowl with the reserved liquid.
