Santa Fe Wagyu Beef Tri Tips

25 Pounds Wagyu Beef Tri Tips
3 Gallons Santa Fe Beef marinade (see recipe)
½ Cup Olive Oil
10 Pounds Onions (sliced 1/8 inch thick)
3 Cups Red Wine
4 Quarts Beef Stock
To Taste Salt
To Taste Black Pepper
Method
- Submerge Wagyu beef in marinade refrigerated for at least 24 hours. Strain and reserve marinade.
- Grill the tri tips to desired doneness (recommend medium rare)
- Into a very hot saucepot, add oil and onions and sauté until lightly browned.
- Deglaze with 3 cups of reserved marinade and wine. Reduce by half
- Add stock and simmer for 1 hour. Season and strain.
- Trim outer fat from grilled beef and slice thin. Serve with sauce on the side for dipping.
