Santa Fe Wagyu Beef Tri Tips

Yields 50 Servings

25 Pounds Wagyu Beef Tri Tips
3 Gallons Santa Fe Beef marinade (see recipe)
½ Cup Olive Oil
10 Pounds Onions (sliced 1/8 inch thick)
3 Cups Red Wine
4 Quarts Beef Stock
To Taste Salt
To Taste Black Pepper

Method

  1. Submerge Wagyu beef in marinade refrigerated for at least 24 hours. Strain and reserve marinade.

  2. Grill the tri tips to desired doneness (recommend medium rare)

  3. Into a very hot saucepot, add oil and onions and sauté until lightly browned.

  4. Deglaze with 3 cups of reserved marinade and wine.  Reduce by half

  5. Add stock and simmer for 1 hour. Season and strain.

  6. Trim outer fat from grilled beef and slice thin.  Serve with sauce on the side for dipping.
