Ingredients
Yield 20 Servings
5 oz. Sun dried cherries
1 each Papaya Diced
1/2 each Pineapple peeled and diced 1/2” diced
2 each Red Peppers 1/4” diced
2 each Yellow peppers 1/4” diced
1 Tbsp Red onion finely diced
12 oz. Apple Cider Vinegar
1 Tbsp Cinnamon
1 Tbsp Nutmeg
12 oz Sugar
1/2 cup Brandy
Salt and white Pepper
2 tsp. Fresh herbs finely chopped (Thyme & Basil)
Method
- Reconstitute Cherries in Brandy until soft. Save the liquid.
- Heat vinegar, sugar, cinnamon, nutmeg and brandy and allow to reduce to syrup consistency
- Carefully mix fruit together with metal spoon, slowly reduce liquid
- Great as a sauce used on Wagyu beef or any type of beef, also great on Berkshire Pork.
- DO NOT OVER MIX
